#31 Mojito

Sometimes, I am not motivated enough to go out on Friday evenings after a long day at work, and an even more stressful commute. R and I tend to stay home maybe kick back with a pizza and movie....To enliven the spirit of the holidays and some lazy Friday evenings right here at home, I shook up a nice little beverage recipe that goes well on days like these....


Ingredients:
Lime Wedges-2-3
Mint Sprigs- 2
Confectioner's Sugar- 2-3 tspn
3/4 cup ice cubes
Light Rum - 2 ounces
Chilled Club Soda- 1/2 cup
Mint Sprig and Lime Wedge for garnish

Method:
1. In a cocktail shaker, squeeze the lemon wedges and drop the wedges into it. Add mint leaves from the sprigs cutting them up with fingers.
2. Add the sugar and muddle all this together with a wooden spoon.
3. Add ice cubes. Pour the Rum and cover with the top and shake the Cocktail Shaker well.
4. Pour into a glass and add the club soda. Garnish and serve immediately for one person.
